# Waffles Makes 3 large waffles ## Ingredients 2 tbsp flax seed 2 c. flour 4 tbsp oil or butter 2 tbsp honey baking soda salt For hearty waffles, 1 cup of any of the following - rice, farro, other grain - chopped walnuts or other nuts - pasta - practically anything else you have on hand ## Recipe Make 2 flax egg: 2 tbsp ground flax seed + 5 tbsp water. Mix it up and set it aside to thicken up for 3 - 5 minutes. Mix up 2c. flour and a pinch of baking soda and a half a pinch of salt. Get about 4 tbsp of fat (oil, melted butter, etc) and about 2 tbsp of honey and mix em up real good. Add 1 tbsp lemon juice and top off with water, milk, stock or some kind of liquid to about a cup and a quarter total. Add the liquids into the flour, along with a cup of whatever mixins you are adding, and mix it all up good. It should be a thick batter, like a loose bread dough. Lightly grease your waffle iron. I don't have a brush so I just pour a dab of oil on a cloth and wipe it down. Turn it on medium high. Fold the flax egg into the batter. Add 1 cup of batter to the iron. Spread the batter around a little so it's flat and even. Let it cook for a couple minutes. Take it out once the edges are firm. Keep doing this, 1 cup at a time, until you've used all the batter. ## Notes You can get crazy making really savory waffles. Add some cyanne, curry powder, ginger, etc. Make a bunch of waffles and freeze them. You can quickly warm them up in a toaster oven, or back on the waffle iron. I like to have a hearty, savory waffle with almost any meal. Or by itself as a quick bite topped with some salsa.
