1 # Ingredients |

2 - 1 kg unbleached wheat flour |
|
|
|
3 - 14 g dry yeast |
|
|
|
4 - 30 g salt |
|
|
|
5 - 0.5 l lukewarm water |
|
|
|
6 - 30 g sugar |
|
|
|
7 - 1 can chickpeas |
|
|
|
8 - 1 tbsp. whole koriander seeds |
|
|
|
9 - 1 tsp cumin (spidskommen) |
|
|

11 # Procedure |
|
|
|
12 1. Mix flour, yeast, salt, sugar, and water and knead to dough. |
|
|
|
13 2. Discard water from chickpeas and put them in the middle of the dough. |
|
|
|
14 3. Grind koriander seeds and put them and other spices into dough. |
|
|
|
15 4. When the dough is smooth, roll it into sausage shape. |
|
|
|
16 5. Cut into ~13 slices |
|
|
|
17 6. Shape slices into larger, flat pieces |
|
|
|
18 7. Optionally freeze some of the dough |
|
|
|
19 8. Bake flat bread in oven directly on the grill at 245 degrees for 3-4 min |
