   VEGAN NO BAKE COOKIES/PEANUT BUTTER CHOCOLATE FUDGE 
 
   actually, these are more like fudge, but they're good just the same. you       
   can make them in about 5 minutes - the only problem is waiting until           
   they're cool enough to eat!                                                    
                                                                                  
   1 stick soy margarine                                                          
   2 cups granulated sweetener (sugar, sucanat, whatever)                         
   1/2 cup rice milk (use unflavored if possible)                                 
   1/4 cup cocoa                                                                  
   1/4 cup or more nut butter of choice                                           
   3 cups or more oats                                                            
   vanilla extract (optional)                                                     
                                                                                  
   combine the margarine, sweetener, and rice milk in a pot over medium or        
   high heat. stir continually, and as the mixture starts to melt, add the        
   cocoa and nut butter. turn up the heat to the highest setting and allow        
   it to boil for one minute. add the vanilla at this point if you want.          
   stir to make sure the mixture is even, and gradually add the oats. you         
   can add more or less oats depending on your preference. more oats will         
   make it more like a cookie and may make it cool faster, while less oats        
   will make it more like fudge. continue stiring the oats until the              
   mixture is even and then spread on wax paper. allow it to cool.
