Cowboy Caviar
Ingredients
2 15oz can black beans, drained and rinsed
1 17oz can whole kernel corn, drained
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup fresh cilantro, chopped
1 Tbsp red wine vinegar
3-4 Tbsp lime juice
2 Tbsp olive oil
1 tsp salt
1/2 tsp black pepper
Preparation
Combine all ingredients in a large bowl.
Cover and refrigerate for at least an hour.
Serve with tortilla chips.
Notes
Can be garnished with avocado slices or cilantro sprigs.
